This post might be my favorite (so far) because it combines two of my favorite things: the awesome power of marriage and the magic of kale. <br /><br />Kale salad is one of the things that kept me going when school and work were too much for me. (Apples were the other.) I give my kale a 10,000 Waves worthy rubdown with salt and flax oil and that "cooks" it down nicely, and then I add some Braggs (who's the hippie now?) and lemon juice and pumpkin and sunflower and sesame seeds, and sometimes avocado on top, and sometimes also apple slices. Oh, fall, thank goodness.<br /><br />Congrats to Luke! Apple-Pea...Here is one of my favorite fall salads.<br /><br />Apple-Pear Salad <br /><br />Ingredients: <br /><br />1 (16 oz.) package Romaine lettuce, washed and broken into bite-size pieces <br />1 (6 oz.) block Swiss cheese, grated <br />1 C cashews <br />1/2 C sweetened dried cranberries <br />1 large apple, chopped and rinsed in lemon water to keep from turning brown <br />1 large pear, chopped and rinsed in lemon water to keep from turning brown <br />Poppy Seed Salad Dressing (recipe below)<br /><br />Directions:<br /><br />Toss together all ingredients in a large bowl.
